Cilantro Lime Cauliflower Rice!

Okay, I LOVE LOVE LOVE Chipotles Cilantro Lime rice! BUT with being LCHF I knew that wasn’t a good idea!! So I thought! You know what I’m going to make some myself!

Here’s what YOU NEED!

I head of Cauliflower
2 medium limes
2 cloves of garlic – Minced
Handful of Chopped Cilantro
2 tablespoons of EVOO Extra Vinegar Olive Oil!


First things first! Grab that beautiful Cauliflower and RICE IT! There is two ways you can do this!


One use a knife and chop it by hand or two stick this bad boy into a food processor and pulse it!

*NOTE* You do not want the Caulirice to be chopped down too much… you want it just enough otherwise it can get all mushy!! I was looking for the texture and feel of rice!!


Once you get your Caulirice chopped it will look something like this!! I chopped mine by hand, only because I couldn’t find the lid to my food processor!! So annoying! After I got done chopping my heart out 20 minutes later!!! Miraculously my food processor lid appears out of nowhere!


Start heating your pan and throw in your 2 tablespoons of EVOO and your Minced Garlic!! Simmer for 2-3 minutes and then add you Caulirice, handful of chopped cilantro and squeeze your lime!! My recommendation is to start out with one lime and then see how tangy you want it!


Here it is!! I wish you could smell it through your electronic device because it smells so DELICIOUS

I used mine for some meal prep! Added a little Garlic Chicken and Bell Peppers with Salsa on the side!
